Reduced-fat Soyannaise

Makes a large(ish) jar - just under 400g. Halve the quantities if you want less! | 5 minutes
This can be used as a dip - or thin down a little and use as a dressing on potato salad and similar dishes.

  • 1 pack firm silken tofu
  • ¾ tsp salt
  • 1 tbsp plain mild-tasting vegetable oil (such as rapeseed/canola)
  • ½ tsp sugar
  • 1 tsp Dijon mustard
  • 1½ tbsp lemon juice
  • 1 tsp cider vinegar

1 Blend the tofu thoroughly until it has lost any grainy texture and is smooth and creamy.


2 Add the rest of the ingredients and blend again so everything is well integrated.

3 Taste and adjust seasoning if necessary.
